Carrot Coconut Lentil Soup (Creamy Healthy Comfort Soup Recipe)

On rainy days, I love making something warm and cozy   and this Carrot, Coconut & Lentil Soup is just perfect! It’s creamy, healthy, and super easy to make. The best part? Most of the ingredients are probably already in your kitchen. It’s full of flavor, packed with protein and fiber from the lentils, and has a gentle kick of spice that makes it extra tasty.

Let’s get cooking!

Method in Detail

Warm It Up

To begin, place a medium or large soup pot on the stove over medium heat and pour in the olive oil. Once the oil is warm, add in the chopped onion. Let it cook for around 3 minutes, stirring occasionally, until the onion softens and turns slightly golden. This step builds the savory base of the soup, so don’t rush it  you want the onion to be soft and full of flavor.

Add Some Flavor

Next, it’s time to layer in the aromatic ingredients. Add the grated garlic to the pot with the softened onions. Stir it in and let it cook for about 2 more minutes until it releases that wonderful garlicky smell. Then, sprinkle in the curry powder, turmeric, cumin, and (if you’re using it) the chilli flakes. Stir everything together well, making sure the spices coat the onions and garlic evenly. Let this cook for another 2 minutes, just until the spices become fragrant. Be careful not to burn the spices here they only need a short time to wake up and bloom their flavor.

Add the Main Ingredients

Now it’s time to bring everything together. Add the dried lentils, grated carrots, vegetable stock, and the entire can of coconut milk into the pot. Stir everything gently but thoroughly so the ingredients are evenly mixed and the lentils don’t clump together. The mixture should already start to smell delicious with the combination of spices, sweet carrots, and creamy coconut milk.

Simmer Time

Bring the pot to a gentle boil, then reduce the heat to medium-low so it simmers gently. Let the soup cook uncovered for about 15 to 20 minutes. During this time, the lentils will soften and absorb all those flavorful spices, while the carrots become tender and slightly sweet. Stir the soup occasionally to prevent anything from sticking to the bottom of the pot.

Blend It Up

Once the lentils and carrots are fully cooked and soft, turn off the heat and let the soup cool for a couple of minutes. Then, using either a stick blender directly in the pot or carefully transferring the soup in batches to a countertop blender, blend the soup until it’s silky smooth. If you prefer a chunkier texture, you can blend only half of the soup and mix it back in with the unblended portion. This gives the soup a nice texture while still being creamy.

Taste & Top

After blending, return the soup to the stove for a quick reheat if needed. Then, season it with salt and pepper to your liking. Always season after blending so you can really control the final taste. Once it’s just right, ladle the soup into bowls and finish it off with a swirl of coconut cream, a sprinkle of chilli flakes, and a bit of chopped fresh coriander for extra freshness and color.

Notes

  • Don’t overcook the soup   if the lentils get mushy, the soup might taste too thick.
