Rich and Creamy Tuscan Prawn Pasta with Garlic and Parmesan

If you love creamy sauces, tender pasta, and juicy prawns – this recipe is for you! I made this dish because I’m obsessed with my Tuscan salmon recipe, and I wanted to try a pasta version. I swapped the salmon for prawns this time, but guess what? Chicken would be just as delicious. This meal is creamy, comforting, and full of flavor – like a warm hug on a plate!

Method in Detail

Cook the Shallots

Start by heating the olive oil in a large saucepan over low heat. Once the oil is warm, add in your finely chopped shallots. Be patient here cook them gently for about 5 to 10 minutes. You’re not trying to brown them, just soften them until they become translucent and sweet-smelling. This slow cooking draws out their natural sweetness and forms the base flavor of your sauce.

Add the Garlic

Once the shallots are soft and glossy, stir in the freshly grated garlic. Let it cook for another 2 minutes. Be sure to keep the heat low so the garlic doesn’t burn. You’ll start to notice a delicious aroma filling your kitchen this means the garlic is doing its magic!

Tomato Time

Next, add the cherry tomatoes directly into the pan. These little tomatoes will burst with flavor as they cook. Let them sizzle and soften for around 5 minutes, stirring occasionally. They should start to wrinkle and release some of their juices, which helps build that rich Tuscan flavor.

Make the Sauce

Now it’s time to build the creamy, dreamy sauce. Pour in your vegetable or chicken stock start with 200ml and add more if you want a looser sauce. Stir in the smoked paprika and chilli flakes for a gentle warmth and smoky depth. Then, add the reduced-fat crème fraîche and your chopped sun-dried tomatoes. Mix everything together and let the sauce simmer on low for about 10 to 15 minutes. The cherry tomatoes will soften even more and start to break down, creating a naturally rich and colorful sauce.

Smash & Stir

After simmering, use a wooden spoon to gently squash the cherry tomatoes right in the pan. This helps them mix into the sauce better and adds extra texture. Now, toss in your two big handfuls of fresh spinach and sprinkle in the grated parmesan cheese. Stir everything together until the spinach wilts and the cheese melts into the sauce. At this point, taste the sauce and season with salt and pepper to your liking. Remember: the parmesan already adds some saltiness, so go light at first.

Boil the Pasta

While your sauce is simmering and getting flavorful, bring a large pot of salted water to a boil. Add your rigatoni and cook it according to the package directions usually about 10–12 minutes for al dente. Don’t overcook it! You want the pasta to have a bit of bite so it doesn’t get mushy when mixed with the sauce. Once done, drain the pasta and set it aside, ready for the final step.

Mix It All Together

Now comes the fun part bringing it all together! Add the cooked rigatoni and the cooked king prawns directly into the sauce. Gently mix everything so the pasta gets coated with that creamy Tuscan goodness. Let it cook for another 2–3 minutes to warm the prawns through and let the flavors blend beautifully.

Finish with Freshness

Right before serving, sprinkle over a handful of freshly chopped basil and, if you like a little kick, a few more chilli flakes. This adds a burst of color and a final layer of fresh, herby flavor. Now your creamy Tuscan prawn pasta is ready to enjoy comforting, satisfying, and completely delicious!

  • 2 garlic cloves, grated

  • 500g cherry tomatoes

  • 200–300ml vegetable or chicken stock

  • 1 tbsp smoked paprika

  • 1 tsp chilli flakes (or less if you don’t want it spicy)

  • 150g reduced-fat crème fraîche

  • 80g sun-dried tomatoes, drained and chopped

  • 2 big handfuls of spinach

  • 400g rigatoni pasta

  • 300g cooked king prawns

  • 50g grated parmesan cheese

  • Handful of chopped basil

  • Salt and pepper to season

Directions

  • Cook the Shallots: Heat the olive oil in a pan. Add the chopped shallots and cook them on low heat for 5–10 minutes until soft and see-through.
  • Add the Garlic: Stir in the grated garlic and cook for another 2 minutes until it smells amazing.
  • Tomato Time: Add the cherry tomatoes and cook for about 5 minutes. They’ll start to soften and release their juices.
  • Make the Sauce: Pour in the vegetable (or chicken) stock, smoked paprika, chilli flakes, crème fraîche, and chopped sun-dried tomatoes. Stir it all together and let it simmer for 10–15 minutes until the tomatoes get really soft.
  • Smash & Stir: Use a wooden spoon to gently squash the tomatoes. Then mix in the spinach and parmesan cheese. Cook until the spinach wilts. Season with salt and pepper.
  • Boil the Pasta: While the sauce cooks, make your rigatoni according to the package directions. Drain and set aside.
  • Mix It All Together: Add the cooked pasta and prawns to your sauce. Stir everything together and cook for another 2–3 minutes so the prawns heat up and the pasta gets coated in creamy goodness.
  • Finish with Freshness: Sprinkle chopped basil and a few extra chilli flakes on top before serving.

Notes

  • Don’t rush the shallots: Cooking them slowly brings out their sweetness.
  • Simmer, don’t boil: Let the sauce gently bubble. If it boils too hard, it may split.
  • Use cooked prawns: Make sure the prawns are already cooked before adding. If using raw prawns, cook them separately first.
  • Season to taste: Add salt and pepper after the parmesan it already brings some saltiness.
  • Watch the pasta: Overcooked rigatoni will turn mushy. Al dente is the best!
