Hey breakfast lovers!
Today I’m sharing a super tasty and high protein breakfast sandwich that fills you up and keeps you energized for the day. This is one of my favorite ways to start the morning. It’s packed with eggs, cheese, and even avocado – yum! And guess what? You can make it in just a few minutes!
Method in Detail
Whisk it
First things first, crack your two eggs into a mixing bowl. Use a whisk or fork to beat the eggs well until the yolks and whites are fully combined. You want a smooth mixture with a light, even yellow color. This helps the eggs cook evenly and gives your sandwich a nice, fluffy base.
Pour and swirl
Place a non-stick frying pan on medium heat. If you like, you can lightly grease the pan with a bit of oil or butter to make sure the eggs don’t stick. Once the pan is warm, pour in the whisked eggs. Immediately pick up the pan and gently swirl it in a circular motion so the egg mixture spreads out across the entire base like a thin omelet. This will be the outer layer of your sandwich and needs to be nice and even.
Bread on top
Before the eggs finish cooking, lay your two slices of bread directly on top of the eggs while they’re still a little wet. Gently press the bread down into the eggs so they stick together as they cook. Let them sit there for about a minute to give the bottom side of the bread a chance to toast lightly while the eggs continue to firm up underneath.
Flip
Now comes the first big flip! Using a spatula, carefully flip the entire egg-and-bread combination over so the bread is now touching the pan and the eggs are on top. Don’t worry if it feels tricky just go slow and steady. This allows the bread to toast properly while the eggs continue cooking on the other side.
Double flip
After about another minute, flip the whole thing one more time. This step makes sure both sides of the bread are golden brown and nicely crisped, and your eggs are fully cooked but still tender. It gives that beautiful sandwich crunch we all love.
Add the goodies
Now the fun part toppings! While the eggs and bread are still in the pan and warm, sprinkle your cheese over the eggy surface so it starts to melt. Add your sliced tomato, avocado, and a handful of spinach or rocket if you’re using it. Don’t forget to season everything with a little salt and pepper to bring out the flavors.
Fold and serve
Once your fillings are in place, gently fold the edges of the egg inward so nothing spills out. Then fold one slice of bread over the other to make a sandwich. You can press it down lightly so it holds its shape. Carefully transfer your masterpiece to a plate and enjoy it while it’s warm and melty!

- Flip: Now carefully flip the whole thing so the bread is on the bottom and the egg side is facing up. Cook for another minute.
- Double flip: Flip the whole thing again so the other side of the bread gets golden and yummy too.
- Add the goodies: Now it’s time to add your toppings – cheese, avocado, tomato, and spinach. Sprinkle on some salt and pepper.
- Fold and serve: Tuck in the eggy edges and fold the whole thing like a sandwich. Slide it onto a plate, and boom breakfast is ready!
Notes
- Don’t use too much heat, or the eggs might burn before the bread cooks. Medium heat is just right!
