Rich and Hearty Beef Bourguignon Recipe for Cold Weather Meals

Beef Bourguignon sounds fancy, but it’s really just the ultimate comfort stew and trust me, it’s easier than it sounds! I make this dish every winter because it’s rich, cozy, and full of flavor. The beef becomes melt-in-your-mouth soft after slow cooking, and the mix of bacon, mushrooms, and carrots in a red wine gravy makes every bite feel like a warm hug.

This recipe has become one of my go-to meals for lazy Sundays. Just toss everything in the slow cooker in the morning, and by dinnertime, the house smells amazing and dinner is ready. Whether you’re cooking for your family or having friends over, this recipe is sure to impress without any stress.

Method in Detail

Browning the Beef and Cooking the Bacon

If you have time, start by browning the beef. This is an important step as it locks in the rich, meaty flavors. Heat a tablespoon of butter in a frying pan over medium-high heat. Once the butter has melted and is bubbling, add the diced beef in batches to avoid overcrowding the pan. Brown each side of the beef for 2-3 minutes until you get a nice, golden crust. After the beef is browned, remove it from the pan and set it aside. In the same pan, add the chopped bacon and cook it until crispy and browned. This not only gives the bacon a nice texture but also allows it to release its fat, which will add flavor to the dish. Once the bacon is crispy, remove it from the pan and set it aside with the beef.

Preparing the Slow Cooker

Now that the beef and bacon are ready, it’s time to bring everything together in the slow cooker. Transfer the browned beef and crispy bacon into the slow cooker. Add the whole button mushrooms, chopped carrots, and halved shallots to the slow cooker. The mushrooms will shrink down quite a bit as they cook, so don’t worry if it looks like there’s a lot at first. Add a tablespoon of tomato purée to help thicken the sauce and give it a slight tangy flavor. Then, throw in the garlic cloves (crushed), along with a couple of bay leaves for that savory aroma. If you have fresh rosemary or thyme, add a few sprigs to infuse the stew with earthy herbs.

Adding the Liquids and Seasoning

Next, pour in the red wine. The wine is essential for creating that deep, rich flavor in the gravy. You don’t need to worry about the alcohol it will cook off during the slow-cooking process, leaving behind a beautifully complex flavor. After adding the wine, pour in just enough beef stock to ensure there is enough moisture for the slow cooker to work its magic. Season the mixture with salt and pepper to taste. Stir everything together lightly to combine all the ingredients, making sure the beef is well-coated in the sauce.

Slow Cooking the Beef Bourguignon

Now comes the fun part: slow cooking! Set your slow cooker on low heat for 7-8 hours. During this time, the beef will become incredibly tender, and the flavors will meld together beautifully. As the stew cooks, the mushrooms will shrink down and release moisture, helping to thicken the sauce. The slow cooking process allows all the flavors to develop deeply and become rich and savory. There’s no need to stir it constantly just let it do its thing while you relax and let the smell fill your kitchen!

Thickening the Gravy

Once the slow cooking is done, it’s time to finish the dish. To thicken the gravy, mix a tablespoon of cornflour with a little cold water in a small bowl to create a smooth paste. Slowly stir the cornflour mixture into the stew and cook for an additional 15-20 minutes in the slow cooker on low to let the gravy thicken. This step ensures that the sauce will have the perfect consistency rich, creamy, and perfect for soaking into your mashed potatoes.

Serving the Beef Bourguignon

Once the stew is thickened, it’s ready to be served! Give it a final taste check and adjust the seasoning if needed. Spoon the Beef Bourguignon onto plates and garnish with freshly chopped parsley for a pop of color and freshness. For the ultimate comfort meal, serve it with creamy mashed potatoes to soak up all that delicious gravy. The tender beef, savory bacon, mushrooms, and rich wine sauce will make every bite a comforting treat.

Ingredients

  • 1kg diced beef

  • 200g bacon (chopped)

  • 1 tbsp butter (for browning the beef)

  • 450g button mushrooms (left whole)

  • 3 carrots (chopped)

  • 2 shallots (peeled and halved)

  • 1 tbsp tomato purée

  • 2 bay leaves

  • 4 garlic cloves (crushed)

  • A few sprigs of rosemary or thyme

  • Salt and pepper to taste

  • 250ml red wine

  • Beef stock (just enough to keep it from drying out)

  • 1 tbsp cornflour (for thickening)

  • Fresh parsley (for garnish)

  • Optional: 150g mashed potatoes per person for serving

Directions

  • If you have time (and I really recommend this), brown the beef in a little butter and cook the bacon in a frying pan before putting them in the slow cooker. It adds extra flavor!
  • Add the browned beef, cooked bacon, mushrooms, carrots, shallots, tomato purée, garlic, herbs, red wine, a little beef stock, salt, and pepper to the slow cooker.
  • Cook on low for 7–8 hours. The mushrooms will shrink a lot as they cook don’t panic, that’s totally normal!
  • Just before serving, mix the cornflour with a little cold water to make a paste and stir it in to thicken the gravy.
  • Sprinkle chopped parsley on top and serve with creamy mashed potatoes.

Notes

  • Try not to skip browning the beef if you can help it, it brings out rich, meaty flavors.
  • Don’t overfill the slow cooker. Leave some space at the top so everything cooks evenly.
  • Don’t worry if it looks like there’s not enough liquid at the start; the veggies and meat release moisture as they cook.
  • Only add the cornflour at the end, adding it too early will break it down and you’ll miss out on that nice thick gravy.
  • Go easy on the salt at the beginning if your stock or bacon is already salty. You can always add more later!

Serving Suggestions

This dish is best with mashed potatoes, but you could also serve it with crusty bread, egg noodles, or even rice. A simple green salad or roasted green beans on the side adds a nice crunch too. Don’t forget a spoon to scoop up that dreamy gravy!
