Slow Cooker Beef Curry Recipe – Tender, Spicy and Delicious

There’s nothing like a comforting bowl of beef curry, especially when it’s made in the slow cooker. This recipe is not only packed with rich, deep flavors but is also a healthy version that keeps things light just 516 calories per serving, including rice! The addition of peanut butter adds a touch of creaminess, while the red chili gives it the perfect amount of heat. If you’re looking for a life-changing, easy-to-make recipe, this beef curry recipe is a must-try. Plus, it’s one of my favorite recipes from my new book, Six Ingredient Slowcooker, available for preorder!

Method in Detail

1. Preparing Your Ingredients

Start by prepping your ingredients. Begin with dicing the onion into small pieces and mincing the garlic cloves. For the red chili, slice it thinly, making sure to remove the seeds to control the heat level this will prevent the curry from being too spicy. Chop the beef into bite-sized pieces, making sure they’re fairly uniform to cook evenly. The peanut butter is next: just a teaspoon is enough to give that creamy richness, but if you love peanut butter, feel free to add a little extra! This is the base of your delicious curry sauce.

2. Combining the Ingredients

Once everything is chopped and ready, it’s time to assemble. Place all of your prepared ingredients into the slow cooker. This includes the beef, onion, garlic, peanut butter, curry powder, cumin, Garam masala, and the sliced red chili. Pour in the beef stock, followed by the chopped tomatoes and tomato purée. Stir it all together thoroughly, ensuring that the beef is coated in the flavorful spice mix. Add salt and pepper to taste, keeping in mind that you can always adjust the seasoning later.

3. Cooking the Curry

Now that everything is combined, set your slow cooker to high and cook for 3-4 hours. If you’re planning to be away from home for a bit longer or want a slower, gentler cook, you can set it on low and let it cook for 7-8 hours. The goal here is to let the beef become tender and for the sauce to thicken up. The longer cooking time helps the flavors meld together, making every bite more flavorful.

4. Serving the Curry

Once your curry is done cooking and the beef is fork-tender, it’s time to serve! Scoop a generous portion of the curry onto your plate, pairing it with some freshly cooked rice or flatbread like naan. Top with freshly chopped coriander for a burst of freshness, and feel free to add a sprinkle of chopped nuts for extra crunch. If you like a little extra spice, you can garnish with additional slices of red chili.

Serving Suggestions

This beef curry recipe goes wonderfully with fluffy rice or flatbreads, like naan, for dipping. You can also serve it alongside a fresh salad or roasted veggies to balance out the richness of the curry. For a little extra crunch, sprinkle some toasted nuts on top!

Fun Fact

Did you know that curry powder isn’t actually a single spice, but a blend of spices? The combination of cumin, turmeric, and coriander (to name a few) gives curry its distinctive flavor and color. It’s like a little packet of magic in every dish!
