High-Protein Broccoli and Leek Recipe of Frittata

Hey there, food friends! If you’re looking for a fun, easy, and super tasty way to eat your veggies, I’ve got just the thing: Broccoli and Leek Recipes! It’s full of protein, cheesy goodness, and delicious greens. Best of all? You can eat it warm or cold, which makes it perfect for lunch or dinner meal prep.

Let’s get cooking!

Method in Detail

Boil Time

To get started, fill a large pot with water and bring it to a boil. While that’s heating up, slice your baby potatoes into even rounds this helps them cook evenly. Once the water is bubbling, add the sliced potatoes and let them cook for about 5 minutes. They should be slightly soft but not falling apart. Two minutes before the potatoes are done, gently add the broccoli florets to the pot. You want the broccoli to keep its bright green color and still have a little bite, so don’t leave it in too long. When both the potatoes and broccoli are done, drain them well and set them aside to cool slightly while you prep the rest of the frittata.

Mixing Magic

Next, grab a large mixing bowl. Crack in all 8 eggs, then pour in the milk. Add the Dijon mustard and wholegrain mustard these add a punch of flavor that really complements the cheesy, veggie base. Sprinkle in most of your grated cheddar and parmesan cheese, saving a small handful to use later as a topping. Season the mix with salt and pepper to your liking. Then whisk everything together until it’s smooth and well combined. The mixture should be creamy, slightly thick, and evenly colored.

Veggie Sauté

Now it’s time to bring out the pan! In a frying pan over medium heat, add 1 tablespoon of olive oil. Once it’s warm, toss in your chopped leeks. Stir them around and cook for about 4–5 minutes, or until they become soft and slightly golden. If you want to add a little extra green power, throw in a handful of fresh spinach and let it wilt down in the pan. This step brings out the sweetness in the leeks and gives your frittata a richer veggie flavor.

Time to Combine

Once everything is prepped, it’s time to bring it all together. Add your cooked potatoes and broccoli to the bowl with the egg mixture, then scrape in your sautéed leeks and spinach. Gently fold everything together with a large spoon or spatula, making sure the ingredients are evenly coated in the egg and cheese mix. Don’t stir too hard you want the veggies to stay in nice bite-sized pieces.

Bake It Up

Preheat your oven to 180ºC (350ºF), if you haven’t already. Lightly grease an oven-safe baking dish with a bit of olive oil or cooking spray, then pour the frittata mixture in, spreading it out evenly. Sprinkle the remaining cheese over the top it’ll form a golden, bubbly crust as it bakes. Slide the dish into the oven and bake for 20 to 25 minutes. You’ll know it’s done when the top is beautifully golden and the center no longer jiggles when you give it a gentle shake.

Garnish & Serve

Once baked, let your frittata cool for about 5 to 10 minutes in the dish. This helps it set up and makes it much easier to slice. Sprinkle some freshly chopped parsley over the top for a pop of color and fresh flavor. Slice and serve with your favorite green salad or some cherry tomatoes on the side. It’s a hearty, wholesome meal you’ll want to make again and again!

  • 300g broccoli, broken into small florets

  • 8 eggs

  • 100ml milk

  • 2 tsp Dijon mustard

  • 1 tsp wholegrain mustard

  • 100g mature cheddar cheese, grated

  • 50g parmesan cheese, grated

  • 1 tbsp olive oil

  • 2 leeks, chopped

  • Salt and pepper to taste

  • Chopped fresh parsley (for topping)

  • A fresh side salad (for serving)

Directions

  • Boil Time! Bring a pot of water to a boil. Cook the sliced baby potatoes for about 5 minutes. Add the broccoli during the last 2 minutes so both veggies are just slightly soft. Drain and set aside.
  • Mixing Magic In a large bowl, whisk the eggs, milk, Dijon mustard, wholegrain mustard, most of the cheese (keep a little for topping), salt, and pepper. Set this yummy egg mix aside.
  • Veggie Sauté In a pan, heat olive oil and cook the chopped leeks until soft. Toss in some spinach if you have it and cook until wilted.
  • Time to Combine Add your cooked potatoes, broccoli, and sautéed leeks into the egg mixture. Mix it all together gently.
  • Bake It Up Pour everything into your greased baking dish. Sprinkle the leftover cheese on top and bake for 20–25 minutes at 180ºC (350ºF), until it’s golden on top and not jiggly in the middle.
  • Garnish & Serve Top with chopped parsley and enjoy with a fresh green salad.

Notes

  • Don’t overboil the veggies they’ll get mushy and lose their crunch in the oven.
  • Make sure to drain all water from the veggies before mixing with eggs. Too much moisture = soggy frittata!
  • Let the frittata cool for 5–10 minutes after baking. This helps it set properly and slice neatly.

Serving Suggestions

  • Pair with a simple green salad or cherry tomatoes with balsamic vinegar.
  • Add a slice of wholegrain bread for extra fiber.
  • Eat it warm for dinner or cold from the fridge for lunch it’s delicious either way!

Fun Fact

Did you know? Frittata comes from Italy and means “fried” or “to fry.” It’s kind of like an omelette and a quiche had a delicious baby with no crust!
