Have you ever had trouble choosing between tacos and lasagne? I sure have! That’s why I came up with the perfect idea Lasagne Tacos. These tasty little tacos have all the rich, saucy flavor of lasagne, but they’re folded up like crispy taco pockets! It’s the best of both worlds, and they cook up perfectly in the air fryer.
They’re cheesy, meaty, saucy, and a little crunchy on the outside. Plus, they’re so fun to make and even more fun to eat. Whether you’re planning a family dinner or just want to try something new with leftover lasagne mince these are a big win!
Method
Make the meat filling
To start, grab a medium saucepan and place it over medium heat. Add the lean beef mince and diced onion together, and cook them until the beef is browned and the onions turn soft and golden. Be sure to break up the mince as it cooks, so there aren’t any big lumps. Once browned, it’s time to add all the good stuff that brings the flavor! Crumble in your beef stock cube, pour in the passata, and stir through the Worcestershire sauce, a dash of red wine (if using), rosemary, tomato purée, oregano, garlic purée, black pepper, and finally, toss in the bay leaf. Give everything a good stir so it’s well mixed. Let the meat mixture simmer gently for around 10–15 minutes. This helps all the flavors come together and the sauce thicken nicely. Don’t forget to remove the bay leaf before moving on to the next step!
Assemble the tacos
Now that your lasagne filling is rich and ready, it’s time to build the tacos. Take each mini tortilla taco and carefully dip one side into the cooked meat sauce just a light dip to give it a little flavor boost. Place the taco down with the dry side on the bottom (this helps keep the tacos from getting soggy). Spread about 1 tablespoon of creamy béchamel sauce inside each taco. Then, spoon in 2 to 3 tablespoons of your lasagne meat mixture. Don’t overfill them just enough to give a good bite without it spilling out. Sprinkle a generous pinch of grated mozzarella on top of the meat for that delicious cheesy pull when it’s cooked. You can also add a bit of fresh basil here if you like a herby touch.
Brush and air-fry
Once your tacos are filled, gently fold each one in half like a taco shell. Now for the tasty golden crunch! In a small bowl, mix your melted butter with garlic purée and chopped parsley to make a quick garlic butter. Use a small brush to coat the outside of each folded taco this gives them a buttery, garlicky flavor and helps them crisp up beautifully. Be sure to brush them after folding so they stay together nicely. Place the folded tacos in your air fryer basket in a single layer, giving them a bit of space so they cook evenly. Set the air fryer to 200°C (392°F) and cook them for around 8 minutes, or until the outside turns golden brown and crispy. Keep an eye on them they’ll smell amazing!
