Easy Pumpkin Chocolate Chip Loaf Recipe (Soft, Moist & Spiced)

There’s nothing better than the smell of pumpkin and spices filling the house on a cool fall day! This Pumpkin Chocolate Chip Loaf is one of my favorite autumn treats soft, cozy, and filled with gooey chocolate chips. It’s the kind of recipe that makes you want to curl up with a blanket and a warm drink. And the best part? It’s super easy to make!

Let’s jump into this pumpkiny adventure!

Method in Detail

1. Preheating and Preparing the Tin

First things first preheat your oven to 180°C (350°F). This gives your oven time to reach the right temperature while you get everything else ready. Next, grab a loaf tin and line it with baking paper. This step is super important because it keeps the loaf from sticking to the pan and makes it easier to lift out later. If you don’t have baking paper, you can also lightly grease the tin with a bit of coconut oil.

2. Mixing the Wet Ingredients

In a large mixing bowl, add the pumpkin puree, eggs, almond milk, vanilla extract, melted coconut oil, and your choice of honey or maple syrup. Use a whisk or spoon to stir everything together until it becomes smooth and creamy. The mixture should look thick, golden, and smell amazing already! Make sure your coconut oil is melted but not hot if it’s too warm, it might start cooking the eggs.

3. Combining the Dry Ingredients

Now it’s time to add the dry ingredients to the bowl. Pour in the buckwheat flour, oats, ground cinnamon, nutmeg, cloves, and ginger, along with the baking powder and baking soda. Mix everything together gently until all the flour and spices are fully combined into the wet mixture. The batter will be thick, but that’s what helps the loaf bake up soft and moist.

4. Adding the Chocolate Chips

Here comes the fun part chocolate chips! Gently fold in about 100g of chocolate chips using a spoon or spatula. Be careful not to overmix at this stage; just give it a few turns until the chips are nicely spread out in the batter. If you love chocolate, feel free to sneak a few extra into the mix (or save some for the top!).

5. Pouring and Topping the Batter

Once your batter is ready, pour it into the lined loaf tin. Use the back of a spoon or spatula to spread it out evenly so it bakes properly. For a pretty and tasty finish, sprinkle some extra oats and chocolate chips on top. This little touch adds a nice crunch and makes the loaf look extra inviting once it’s baked.

6. Baking the Loaf

Place your tin in the preheated oven and bake for about 45 minutes. You’ll know it’s done when the top is golden brown and a toothpick inserted into the middle comes out clean or with just a few crumbs (not wet batter). If your oven runs hot, check it around the 40-minute mark to make sure it doesn’t overbake.

7. Cooling and Serving

When your pumpkin loaf is done baking, take it out of the oven and let it cool in the tin for 15 minutes. This step helps the loaf set, so it won’t fall apart when you take it out. After that, gently lift it out using the baking paper or turn it onto a cooling rack. Let it cool a bit more if you can wait but if not, go ahead and slice a warm piece and enjoy!

Ingredients

  • 250g pumpkin puree (fresh or canned)

  • 4 tbsp coconut oil (melted)

  • 100ml honey or maple syrup

  • 2 eggs

  • 2 tbsp almond milk

  • 1 tsp vanilla extract

  • 200g buckwheat flour

  • 50g oats

  • 2 tsp ground cinnamon

  • 1/4 tsp ground nutmeg

  • 1/4 tsp ground cloves

  • 1/4 tsp ground ginger

  • 1 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 100g chocolate chips (plus a few extra for sprinkling!)

Directions

  • Preheat your oven to 180°C (350°F). Line your loaf tin with baking paper so the bread doesn’t stick.
  • In your big mixing bowl, combine pumpkin puree, eggs, almond milk, vanilla, melted coconut oil, and honey (or maple syrup). Mix it well until it’s smooth and golden-orange!
  • Add in the dry ingredients: buckwheat flour, oats, cinnamon, nutmeg, cloves, ginger, baking soda, and baking powder. Stir everything until it looks like a thick batter.
  • Gently fold in those sweet chocolate chips. (Try not to eat too many while mixing!)
  • Pour the batter into your loaf tin. Spread it out evenly, and sprinkle a few extra oats and chocolate chips on top for a yummy look.
  • Bake for 45 minutes, or until a toothpick comes out clean.
  • Let it cool for about 15 minutes before taking it out of the tin. Slice and enjoy!

Notes

  • Make sure the coconut oil is fully melted and slightly cooled so it doesn’t cook the eggs.
  • Don’t overmix the batter, just mix until the dry spots are gone.
  • Check your loaf at the 40-minute mark to make sure it’s not overbaking (some ovens run hot).
  • Let it cool before slicing, or it might crumble.

Serving Suggestions

  • Warm it up and spread a little almond butter or cream cheese on top.
  • Enjoy it with a mug of hot chocolate or spiced tea.
  • Serve it as an afternoon snack or even breakfast with fruit on the side.

Fun Fact

Did you know pumpkin is actually a fruit? Yep, even though we often cook it like a veggie, it’s from the same family as cucumbers and melons!

Conclusion

This Pumpkin Chocolate Chip Loaf is a cozy fall treat that brings warm, spiced flavors together with melty chocolate. It’s simple enough to bake with kids and tasty enough to share with everyone! Whether you eat it fresh out of the oven or save some slices for later, it’s bound to become a seasonal favorite.
