Roasted Chicken with Rosemary Thyme and Sage (Easy Herb Roast Recipe)

Hi friends! One of my favorite ways to start the week is by roasting a whole chicken. It fills the kitchen with the most amazing smell, and it helps me prep for the days ahead. This Roasted Chicken with Rosemary Thyme and Sage is a recipe I use all the time. It’s cozy, simple, and packed with flavor. I even use it in other meals like Caesar salads or noodle jars, just like I show you in my new cookbook Unprocessed Made Easy! Let’s jump in!

Method in Detail

Preheating the Oven

To begin, preheat your oven to 190°C (375°F). This is the ideal temperature for roasting a whole chicken evenly  hot enough to develop a golden, crispy skin while allowing the inside to cook through slowly and retain moisture.

Preparing the Vegetable Base

Next, prepare your vegetable base. Chop one onion, two to three carrots, and three sticks of celery into medium-sized chunks. Spread these chopped vegetables evenly across the bottom of a deep roasting pan or baking dish. These not only lift the chicken up to allow heat to circulate but also infuse the meat with rich flavor and create a base for delicious pan juices.

Positioning the Chicken

Place the whole chicken  approximately 1.6 kg in size  directly on top of the chopped vegetables in the pan. Make sure the chicken is centered and sits securely, breast-side up.

Stuffing the Chicken Cavity

Now it’s time to flavor the chicken from the inside. Cut one lemon in half and peel 3 to 4 garlic cloves. Gently stuff the cavity of the chicken with the lemon halves, garlic cloves, and a few whole sprigs of fresh rosemary, thyme, and sage. This aromatic blend will infuse the chicken as it roasts, adding a warm, herby depth to every bite.

Seasoning and Oiling the Chicken

Drizzle 4 tablespoons of olive oil generously over the chicken, using your hands or a brush to coat the skin evenly. Then, finely chop some additional rosemary, thyme, and sage (don’t use whole sprigs here, as they can burn). Sprinkle the chopped herbs all over the chicken, followed by a generous seasoning of salt and freshly ground black pepper. Make sure to rub the seasoning into the skin for maximum flavor.

Roasting the Chicken

Transfer the roasting pan to the preheated oven and roast the chicken for 1 hour and 30 minutes. During roasting, the herbs and olive oil help the skin turn golden and crisp while the juices from the chicken and vegetables create a flavorful broth at the bottom of the pan. To check if the chicken is fully cooked, insert a meat thermometer into the thickest part of the thigh  you’re looking for an internal temperature of 75°C (165°F). If you don’t have a thermometer, pierce the thigh with a knife or skewer; if the juices run clear (not pink), the chicken is ready.

Resting the Chicken

Once it’s done roasting, carefully remove the chicken from the oven. Tent it loosely with aluminum foil and let it rest for 10–15 minutes before carving. Resting is crucial; it allows the juices inside the chicken to redistribute, which makes the meat tender and juicy instead of dry.

Necessary Tools

  • Roasting pan or deep baking dish
  • Sharp knife
  • Cutting board
  • Tongs or large spoon
  • Meat thermometer (helpful but optional)
  • Aluminum foil (optional for resting)

Ingredients

  • 1 large whole chicken (about 1.6 kg)

  • 1 onion, chopped

  • 3 sticks of celery, chopped

  • 2 carrots, chopped

  • 1 lemon

  • A few garlic cloves (3–4 is great!)

  • A bunch of fresh herbs: rosemary, thyme, and sage

  • Chop half, leave the rest whole

  • 4 tablespoons olive oil

  • Salt and pepper to season

Directions

  • Preheat your oven to 190°C (that’s about 375°F).
  • Chop your onion, celery, and carrots and place them in the bottom of a roasting pan. These veggies help flavor the chicken and keep it juicy.
  • Place the chicken right on top of the veggies.
  • Stuff the chicken’s inside (called the cavity) with a lemon (cut in half), a few garlic cloves, and the whole sprigs of rosemary, thyme, and sage.
  • Drizzle the chicken with olive oil and sprinkle the chopped herbs, salt, and pepper all over it.
  • Roast in the oven for 1 hour and 30 minutes or until the chicken is golden brown and fully cooked. You can check this by poking the thickest part of the thigh  if the juices run clear, it’s done! A meat thermometer should read 75°C (165°F).
  • Let it rest for about 10–15 minutes before carving. This keeps it juicy and tender!

Notes

  • Don’t skip resting the chicken after it comes out of the oven  it helps keep all the juices inside!
  • Be sure to stuff the chicken with the herbs and lemon before roasting, not after.
  • Use a roasting pan deep enough to hold the veggies and any juices that come out.
  • Make sure to chop the herbs you sprinkle on top so the whole sprigs can burn.

Serving Suggestions

  • Slice it up and serve with mashed potatoes and green beans.
  • Shred some chicken for a sandwich or wrap.
  • Add chopped chicken to your salad for lunch the next day.
  • Save the bones and leftover veggies to make a homemade chicken stock!

Fun Fact

Did you know that herbs like rosemary and thyme have been used in cooking for thousands of years? Rosemary even means “dew of the sea” in Latin. These herbs aren’t just tasty they’re also full of natural goodness!

Conclusion

Roasting a chicken with rosemary, thyme, and sage is such a rewarding and cozy thing to do. It makes your kitchen smell like a dream, and you’ll have delicious meals ready for days! Whether you’re making sandwiches, salads, or soups, this roasted chicken is a great place to start. Try it out and let me know how you use it in your week!
